The Science of Roasting

Roasting is chemistry in action! When beans hit temperatures above 300ยฐF, the Maillard reaction kicks in โ€” creating hundreds of new flavor compounds. Sugars caramelize, acids transform, and oils develop. It's like a laboratory experiment where the result is delicious.

First Crack โ€” The Pop!

Around 383ยฐF, beans go through 'first crack' โ€” a popping sound like popcorn as steam and COโ‚‚ escape. This is where light roasts are pulled out. Darker roasts keep going until 'second crack' for deeper, bolder flavors.

Cool, Rest, Cup

After roasting, beans need to rest and degas โ€” releasing COโ‚‚ they absorbed during roasting. Then comes the most important step: cupping! Our team tastes every batch to make sure it's perfect before it reaches you.
